This simple combination is a wonderful play on soft textures and is quite homogeneous in its taste combinations, so this is an exception to the smørrebrød rule of sour/sweet and soft/ crunchy combinations.
Boil the eggs and peel them cautiously so as to not damage the surface of the egg whites, since their shine is part of this smørrebrød’s charm. Cut each egg into 5 boat-shaped pieces.
Remove the crust from the bread, spread butter on it, and place the eggs facing in opposite directions on each end of the bread. Place shrimps in the middle with a sprig of dill and a lemon wedge on top.
