In 2019, the city of Odense became represented among the top smørrebrød restaurants after the opening of the small and cosy HOS restaurant, situated in the centre of Odense.
In the evening, HOS is a regular gourmet restaurant, but for lunch, they offer around nine pieces of smørrebrød at a very high quality. The style is a blend of modernised classics: the food is made with modern techniques, but it respects the originality of the classics.
The host couple, Michelle Hemme and Jacob Spolum, had a background in fine dining, and they decided to broaden their horizons with smørrebrød as they opened this restaurant. Michelle is a highly respected sommelier, which makes for some interesting beer, aquavit, and wine pairings with the food. Wine is available in high quality, even if you just want one glass, so wine lovers in particular should take note of HOS restaurant.
Chef Jacob worked at a number of highly regarded gourmet restaurants, and it is a true joy to see his techniques applied to smørrebrød.
